Super Easy Cordon Blue

Simply take thin slices chicken, dip both sides in honey mustard dressing, lay flat in bread crumbs on one side and place a piece of ham on top and a handful of Swiss in the center. 
Roll and place seam side down in baking dish. Top with another piece of Swiss and bake at 350 for 25 min. 
That's it!
Topped with mushroom gravy for extra yum!

Ricotta Kale Dip

So yummy and so easy! Don't buy those frozen dips full of junk! Make it better... Make it yourself!
1 15oz container ricotta
4tbsp cream cheese
2 cups chopped kale
2 tbsp milk
1/4 c grated Parmesan 
1Clove garlic minced
1 tsp salt
Fresh pepper
Pinch of crushed red pepper flakes
2 tbsp olive oil

Heat olive oil in pan, add garlic then kale until wilted. Remove to plate to cool.
In a bowl combine other ingredients and mix. Add kale and combine.
Bake in shallow dish 425 for about 20 min or until bubbly and brown.  Serve with tortilla chips, pita chips or crostini

A Mushroom Is A Meal!

A portobello mushroom is very meaty and filling. So I decided to make it a meal.
Large Portobello mushroom
1/2 cup stuffing of choice
Top with:
1/4c cream cheese
2 tbsp Parmesan cheese 
Dash of Tabasco
Few dashes of Worchestershire sauce 
Dash of garlic powder
Dash of onion powder
Black pepper
Combine 

Oven at 450
Drizzle olive oil on mushroom and bake for 10
Take out and top with stuffing..put cream cheese mixture over top and back in oven for 15 min. 
You will be full! Enjoy!

It's Greek To Me!

Growing up, we had a grape vine in our back yard and my mother always picked the leaves and made home made Dolmades that we would and still do, fight for! 
I don't have a vine unfortunately, but you can buy them in a jar and just rinse them off. Combine:
2 lbs of beef with 2 cups of uncooked rice
Add salt and pepper, tbsp of garlic, tbsp of onion powder and mix together well. 
Place a leaf flat and put about a teaspoon of the mixture in the middle.... Fold in the side and roll up... Just like a cabbage roll 😀
Side in a pot and cover with water and about 1/4 cup lemon juice. Put a plate on top to keep them from floating and simmer for an hour to cook through and make leaves tender. 
Serve with A little butter , salt and lemon over top! Delicious!

Off To India and Back!!

This past Saturday I cooked up an Indian feast including butter chicken, saag paneer (Indian cheese), paneer makahani, aloo chole (chick pea and potatoes) and basmati rice.
That's a lot of work and sometimes it's not enjoyable to eat the exact same leftovers so I like to get creative!
I took all the leftovers and made a wrap by layering them in a tortilla ( a fresh chapati would be better if you have) and topped with a fresh raita sauce made from Greek yogurt, grated cucumber, mint, lemon juice and salt.
This was delicious!

Nothing Fishy About This!


Baked Lemon Dill Cod with Brussels Salad and Cilantro Lemon Rice

Preheat 375...
Spray baking dish with oil and place cod in dish.
In a bowl combine:
1/2 c mayo
2tbsp fresh dill chopped
2 tbsp fresh parsley chopped
1tsp lemon zest 
Tbsp lemon juice
Salt
Pepper
Spread over cod.. FYI: you can make this with salmon if you like but I HAVE ALWAYS HATED SALMON... RIGHT DAD?!! Lol 
Place sliced lemons on top, cover in foil and bake 30 min or until flaking
Take foil off and broil to brown top.
SALAD:
2 c Brussels
1/4 c shredded purple cabbage 
1/4 c dried cranberries
1/4 c candied pecans
 Dressing:
1/2 c veg oil
1/4 c olive oil 
1 tsp white vinegar
1tsp Japanese mirin vinegar
1 tsp grain mustard
1 small clove garlic minced
1 tbsp honey
1 tsp lemon zest plus 1 tsp lemon juice
Salt 
Pepper
Shred fresh Brussels sprouts or pulse in food processor (easier) to make a slaw
Combine all ingredients and toss. 
Rice: 
Make 4 cups cooked brown rice and add 
Chopped cilantro, lemon juice, 2 tbsp butter, salt and pepper to taste

You'll Go Bananas For These Banana Muffins!

When faced with dietary challenges, we tend to believe that we can't have things we normally enjoy....JUST NOT SO!!
I created these for my husband who needs to watch his cholesterol. Zero cholesterol!
1.5 c Whole wheat flour
1/2 cup of oats
3/4 c of brown sugar
1 tsp baking soda
1/8 tsp salt
3 ripe bananas
2 egg whites
6 ounces apple sauce
1/4 c chocolate chips
Preheat 350 degrees
Combine flour, salt, sugar and baking soda in large bowl.
Puree bananas in processor, add egg whites and apple sauce until smooth. (you can use a hand mixer if need)
Add banana mixture to dry with fork until just blended.  Fold in chocolate chips.
Fill 12 muffin cups to the top, sprinkle with oats and bake 30 min. Done when toothpick comes out clean.

S'mores Brownies Please!

I dont even eat sweets but I did enjoy this one creation! 
Make a graham crust with melted butter and sugar and press into bottom of greased pan. Bake for 5 min to set.
Use your favorite brownie mix or recipe... I use DH and follow the directions for chewy brownies. After baked... Top with mini marshmallows and broil until golden toasted. Cool completely before cutting.
